Vegetable Raita Recipe

Vegetable or veg Raita is considered best among all other raitas. Any type of vegetable available to you can be used in this raita.

Ingredients for vegetable raita:

1 1/2 cup yogurt (dahi)
1/2 cucumber (Kheera)
1/2 Beetroot, chopped
1/2 medium sized Onion, chopped
1/2 medium sized tomato, chopped
2 table-spoon mint leaves, finely chopped (Pudina)
1/2 t-spoon roasted ground cumin (Jeera)
1/2 t-spoon salt
1 green chilly, finely chopped
1/2 t-spoon kala namak (if not available, then take salt instead)
1/4 t-spoon black pepper (Kali mirch)
1/4 t-spoon red chillies powder (lal mirch)
1/4 t-spoon chat masala (Optional)
10-15 fresh coriander leaves
3/4 cup water


How to make vegetable raita:

  • Peel the cucumber and chop it into small pieces (cubes).
  • Take a medium sized bowl and add yogurt to it. Mash it with a blender or madani until it gets smooth. Add water and remaining ingredients except cucumber, beetroot, onion, tomato and again mix them well.
  • Now add cucumber, beetroot, onion, tomato to it and mix it again.  Refrigirate vegetable raita for 1/2 hour
  • Before serving, garnish vegetable raita with finely chopped coriander leaves and serve chilled.
